As if there isn't already enough to juggle around here I woke up this morning feeling like I'd been run over by a truck in the night. I guess I've finally succumbed to the kid-cootie-germs that have been bouncing around the house.
When someone is sick my first instinct is to make a giant pot of nice hot soup, typically chicken soup. The thing is... back in the summer when I started getting more serious about running I also finished making the switch to a vegetarian diet... so no chicken soup for me. But I feel awful and I really, really want hot soup with lots and lots (and lots) of garlic. Boo.
Now, I'm very happy with my decision to go vegetarian but I hate to miss out on things, especially good food, so recently I've been a little more adventurous with customizing what would normally be meat based recipes and tweaking them to fit my vegetarian diet. This seemed like a great opportunity for a little tweaking.
I used the recipe for The Best Chicken Soup in the Universe from over at JMF and simply substituted vegetable broth for the chicken broth and replaced the actual chicken with cannellini beans. There's even a vegetable version of the Better Than Bouillon.
It turned out great! Super simple, satisfies my craving for hot garlic-y soup while I'm sick, and keeps me on the vegetarian wagon.

Yay for you to go Vegetarian! I've been Vegetarian for some time now, and went Vegan last October. Cooking is lots of fun :)
